The primary responsibility of the Lead Cook is to prepare food of the highest quality and taste for the residents and guests of the Community, ensuring that the food presentation enhances the dining experience of the residents and guests.  Cleanliness of all the Dining Services (DS) areas and the Dining Service equipment is of utmost importance.  The Lead Cook will assist the Dining Services Director (DSD) in managing the operation of the DS department to include staffing, food ordering, preparation, menu planning, food delivery and sanitation in accordance with appropriate industry and health department regulations.  A key responsibility is to assist in maintaining a positive physical and social environment for the residents.   The main objective is to ensure that dining is the highlight of the resident's day.

Areas of Responsibility

  • Prepare delicious and attractive food that is colorful and tastefully presented, making each meal service an exceptional occasion.
  • Supervise the kitchen under the direction of the DSD.
  • Supervise and/or assist in the proper washing of all dishes, cookware, flatware and utensils.  
  • Properly maintain all kitchen equipment.  
  • Monitor water, food, refrigerator and freezer temperatures and/or chemical compounds as appropriate to ensure the prevention of food borne illness and the spread of communicable disease. 
  • Assist the DSD in establishing and maintaining the cleaning schedule.
  • Maintain kitchen and food preparation areas in a clean and sanitary manner.
  • Approach residents and associates in a friendly, service-oriented manner.
  • Assist in scheduling, supervising and training the DS associates in day-to-day DS operations.  Assist in making job assignments and setting priorities. 
  • Comply at all times with Company standards and regulations to encourage safe and efficient Community operations.
  • Prepare high quality meals consistent with local customs and tastes.  Consistently adhere to the standard recipes, posted approved menus, budgeted costs, and Company policies.
  • Be aware of the flow and timing as the food is dished up from the serving line and make corrections as needed.
  • Work closely with the Lead Server in training and scheduling associates. 
  • Monitor that all the required temperatures are being maintained and recorded according to Company policy. 
  • Responsible for the safe working condition of all equipment including performing preventative maintenance work orders in a timely manner.
  • When required, receive and verify by inventory and signature the correct shipment of all food, supplies and equipment.
  • Assist in the process of accounting for and reporting guest and associate meals.
  • Participate in recruitment, selection and orientation of new DS associates.
  • Communicate policies and procedures to DS associates. 
  • Assist in evaluating performance and coaching as necessary. 
  • Assist in maintaining food costs within budgetary constraints.  
  • Assist in maintaining strict inventory control and corporate par level stocks of specified items.
  • Assist in planning community and individual resident menus in coordination with the Executive Director, the DSD and Assisted Living associates, if necessary.  Assist in planning special events scheduled by the Lifestyle Director, the Resident Council and the Sales & Marketing Department.
  • Ensure that the menu is followed and meals are prepared according to the approved recipes while maintaining the appropriate portion control.  Ensure food is prepared in a nutritional, appetizing fashion, and presented in an attractive manner.
  • Assist the Cooks in maintaining the appropriate resident diets and noting on the substitution form any changes to the menus including maintaining required menu substitution file as required by state regulations.
  • Assist the DSD in maintaining adequate supplies, food, and bottled drinking water to fulfill emergency requirements of local and state authorities.
  • Assist in maintaining a clean and orderly kitchen and storage areas that successfully meet or exceed all state and local health requirements.
  • Ensure that all food supplies and other goods are properly stored, labeled, dated and accounted for.
  • Deliver all signed delivery slips and invoices to the DSD in a timely fashion.
  • Assist the DSD in conducting inventories of food supplies and compute monthly food cost reports as required.
  • Maintain records of meals served and records of food and supplies used as required.
  • Interact with the DSD and the residents to ensure satisfaction with the DS program.

  • Supervise the cleaning of all areas of the kitchen.  Follow the cleaning schedule and oversee the activities of the kitchen associates.  Assist in the cleaning of the kitchen areas as needed. 
  • Make preparations for the next day, sort leftovers, pull foods from the freezer and walk-ins. Train the Kitchen Assistants to help in this activity.
  • Assist the DSD in maintaining the Safety Data Sheets (SDS) contained in the SDS Book and train associates in the use of the SDS Book.
  • Attend and participate in all meetings and training as directed by Company policy and the DSD.
  • Maintain high standards of personal appearance and grooming, which include wearing the proper uniform and name tag when on duty.
  • Be constantly watchful of signs that residents are not able to function independently or a change in resident's behavior.  Report all signs to the DSD following the Company policies and procedures.
  • Report any and all deferred maintenance, vandalism or hazardous situations to the DSD as discovered and take appropriate action as necessary.
  • Ensure understanding of and compliance with all regulations regarding residents' rights.

Special Requirements/Certifications:

* Must be a minimum of 18 years of age. 

* High school diploma or equivalent.

* Minimum of three (3) year food service (or related field) preferred.

* Must have state specific Food Manager Certification or be able to certify within 30 days of hire.

* Some software and computer skills preferred.

* Must be flexible, pay attention to detail, and have a sense of teamwork.

* Must possess, or be willing to obtain, current food manager certification and certification of Hepatitis A vaccinations where required.

* Must have a positive Criminal Background Screening.
