Hilton Hotels and Resorts is searching for an experienced Executive Chef to lead and direct a culinary team in a NJ resort property. This is a confidential search; no recruiting agencies or third parties please.

Job Purpose: To supervise food preparation in all food outlets of the resort, ensuring standards are maintained as set forth by company expectations and directives.

Job Responsibilities:

1. Supervise and direct food preparation staff, including hiring, dismissals, disciplinary actions, performance evaluations and development.

2. Schedule all employees under his/her supervision, maintaining adequate staffing levels while adhering to labor standard guidelines.

3. Supervise all kitchen operations, including methods, portioning, and garnishing. Ensure attractive presentation of all food and dishes.

4. Plan meals and develop menus.

5. Assist the General Manager, Assistant General Manager, and/or Director of Food and Beverage with banquets, parties, and other special events. Regularly partner with the sales staff.

6. Requisition food and equipment, giving specifications, quantities and quality descriptions.

7. Monitors budget and assists in developing annual operating budget with a focus on revenue and profit maximization.

8. May assist with other duties as assigned.

Job Qualifications:

  • Graduation with certification from a culinary institution required.
  • Minimum 2 years experience as a Sous Chef in a high volume kitchen, 2 years kitchen supervisory experience with 3 years kitchen operations experience required.
  • Must be able to prep food products, using standardized food preparation techniques.
  • Experience computing discounts, commissions, and selling prices.
