The Director of Food and Beverage, an Executive Committee member, is responsible for overseeing the entire food and beverage operation. In its current state, the operation consists of 14K Restaurant & Lounge, Starbucks, Banquets and Culinary production at the property. Additional responsibilities will include the opening of a new restaurant with two new lounges in the Spring 2019, as well a new delivery concept in private dining.

 

The overall goal will be eclipsing budgeted food and beverage revenues and profits yearly. Areas of focus will be food and beverage programming, menu engineering, staff selection, training and product/service quality.

 

  • Ensures compliance with health, safety, sanitation and alcohol awareness standards and liquor laws.
  • Develop, recommend, implement and manage the division's annual budget, business/marketing plan, forecasts and objectives to meet/exceed management expectations.
  • Implement effective controls of food, beverage and labor costs among all sub departments and monitor the food and beverage budget to ensure efficient operation and that expenditures stay within budget limitations, including achieving budgeted revenue and labor expenses
  • Assist the departmental managers in establishing and achieving predetermined profit objectives and desired standards of quality food, service, cleanliness, merchandising and promotions and managerial goals.
  • Regularly review and evaluate the degree of customer satisfaction of the individual outlets, including banquet service, to recommend new operating and marketing policies whenever a change in demand, customer dissatisfaction, or a change in competitive environment requires such changes. Investigate and resolve food quality and service complaints.
  • Develop, along with assistance from department heads, operating tools necessary and incidental to modern management principles such as budgeting, forecasting, purchase specifications, recipes, portion specifications, menu abstracts, food production control, job descriptions, etc.
  • Assist Director of Human Resources with recruitment and development of employees; hire, train, empower, coach and counsel, performance and salary reviews, resolve conflict through fair treatment policy, discipline and terminate, as appropriate.
  • Ensure compliance with Hamilton Hotel Washington policies and procedures that relate to food and beverage, as well as local, state, and federal laws and regulations.
  • Assist other departments wherever necessary and maintain good working relationships
  • Comply with hotel security, fire regulations and all health and safety legislation
  • Ensure communication meetings are conducted and post-meeting minutes generated

Qualifications

  • Four-year college degree or equivalent experience required
  • Minimum of 4 years of progressive responsibility in food and beverage industry required
  • Minimum of 2 years of personnel management, preferably in a club/golf/hospitality/service industry required
  • Prior 4-star experience preferred
  • Requires advanced knowledge of the principles and practices within the food & beverage/hospitality profession. This includes the knowledge required for management of people, complex problems and food and beverage management.
  • Desire high energy individual, entrepreneurial spirit, motivational leader, proven track record in high volume concept, effective communicator, effective in providing exceptional customer service and ability to improve the bottom line
  • Must be proficient in Microsoft Word and Excel
  • Must have excellent organizational, interpersonal and administrative skills
