The Executive Chef will lead the efforts to recruit, train, open and operate a team of industry-leading professionals in making Via Sophia Restaurant, Bar and Society Bar a top-10 restaurant in Washington D.C. The individual must represent culinary expertise with refined cooking technique, style, and taste, in order; to pioneer menu development and excellence. They will be responsible for maximizing financial responsibilities, ensuring an authentic Italian experience, attracting hotel and non-hotel guests by understanding the local market and partnering with the culinary leadership. He/She will determine training needed to accomplish goals, then implement the plan.

RESPONSIBILITIES

  • Craft culinary experiences that reflect the restaurant concept, constantly looking for new and different ways to elevate the guest dining experiences.
  • Plan, direct, and supervise the food preparation and cooking activities of their kitchens.
  • Develop recipes, portion specifications, and establish standard preparation procedures for all dishes.
  • Maintain superior knowledge in trends, industry demographics and market focus. Research new initiatives, technology, products and services that will propel Via Sophia forward as a market leader.
  • Determination of purchasing specifications and budgetary allotments for all menu items.
  • Make periodic and regular inspections of units to observe quality of food preparation and service, food appearance, cleanliness and sanitation of production and service areas, equipment, and employee appearance.
  • Collaborates with Restaurant General Manager on restaurant operations, business/financial decisions, and supervisory responsibilities.
  • Maintain complete knowledge of and compliance with all company policies, service procedures and standards.
  • Have a working knowledge of company invoice tracking, labor tracking, schedule preparation, food cost management, labor cost management, inventory control and hiring/counseling/termination policies.
  • Monitors guest satisfaction, ensuring a world class experience; Assists guests with special requests as needed.
  • Actively participate in the hiring process to identify the right talent to support the concept.
  • Manage staffing levels to meet service standards, operational needs, and financial objectives.
  • Provide guidance and direction, including setting standards and monitoring performance.
  • Facilitate the fair and equal treatment of employees. Solicits employee feedback, utilizes an "open door" policy and reviews employee satisfaction results to identify and address employee problems or concerns.
  • Demonstrate honesty/integrity and model appropriate behaviors by leading by example and serving as a role model.
  • Provide the leadership, vision and direction to bring together and prioritize the restaurant goals in a way that will be efficient and effective.
  • Maintain professional and technical knowledge by tracking emerging trends in the restaurant industry, attending educational workshops, reviewing professional publications, establishing personal networks, and/or benchmarking state-of-the-art practices.

 EDUCATION and/or EXPERIENCE

  • Minimum 5 years' experience as an Executive Chef in a restaurant, hotel, or food and beverage unit with a similar style of dining, capacity, and volume.
  • Must have at least 3-5 years of Catering experience & ability to manage multiple on-premise events simultaneously through skillful organization and delegation skills.
  • Must have solid managerial experience with operations, logistics, guest service and all other aspects of the restaurant
  • Culinary Degree preferred.
  • Knowledge of your venue's featured cuisine and beverages is a plus. (i.e. For a fine dining Italian Restaurant, representatives should know history, origin, content, and preparation methods of Italian cuisine and wines.)
  • Must possess valid ServeSafe/Food Safety Handler's/TIP Management certification
