Responsible for the overall operations and of all member dining areas including Main Dining Room, One Mile Bar & Grille, Palazzo and Cabana.

Essential Duties/Responsibilities include the following. Other duties may be assigned.

  • Directs daily operations of the Main Dining Room and all other food service areas.
  • Develops standard operating policies and procedures for all outlets and holds employees accountable to regularly achieve these standards.
  • Hires, trains, supervises and evaluates dining room staff.
  • Conducts daily pre-meal meetings communicating specific information to the staff.
  • Ensures proper set-up, breakdown of each meal period, maintaining all equipment in good shape.
  • Maintains regular contact with members and helps to insure maximum member satisfaction with regular interaction including answering questions, seeking feedback, solving problems, overseeing services and cleanliness, and showing the Club facilities to visitors.
  • Assist in developing food and beverage operating and capital budget for each revenue outlet.
  • Prepares and monitors the budget; directs corrective action procedures as necessary to help assure that budget goals are attained, and monitors internal cost control procedures.
  • Monitors labor and evaluates staffing schedules and actual labor hours and costs in comparison to budget.
  • Develops training and professional development programs for self as well for occupational staff, with intent of exceeding member expectations.
  • Researches new food and beverage products and develops an analysis of their costs/benefits.
  • Coordinates and works with all departments on food and beverage programming and coordinates food and beverage communications with the Catering & Social Events Manager.
  • Oversees some special events in conjunction with Catering &Social Events Manager to ensure all planned activities meet and exceed member/guest expectations.
  • Monitors safety conditions and employees' conformance with safety procedures; updates emergency plans and procedures, and assures that effective training for these programs is conducted in all departments of responsibility.
  • Participates in ongoing facility inspections throughout all dining rooms and service areas to assure that cleanliness, safety and other expected standards are consistently attained. Reviews all accidents and assures appropriate documentation is completed and distribution accordingly.
  • Attends weekly food and beverage department meetings, BEO and Manager's Meetings.
  • Counsels and coaches staff about performance issues and complaints; resolve issues using documented progressive discipline; seeks advice and partnership from the Director of Human Resources.
  • Oversee JONAS POS system.
  • Other duties and responsibilities as assigned by the General Manager and or Director of Food & Beverage.
