The Sous Chef will assist in the directing all aspects of culinary related execution according to Via Sophia Restaurant, Bar and Society Bar standards. The individual must represent culinary expertise with refined cooking technique, style, and taste, in order; to pioneer an authentic Italian experience. Communicates daily with the Executive Chef for an update regarding planning, staffing, and internal procedures. Complete daily food requisition and oversee specials utilizing and build-up of overstock. Assist in the responsibility to select, train, supervise, develop, discipline and counsel employees in accordance with company policies and procedures.

  • Anticipate revenue/cost problems and report discrepancies to Executive Chef and Director of Food & Beverage.
  • Scheduling, training and management of culinary staff.
  • Assist hotel staff with accounting related issues.
  • Analyze financial and operating information on an ongoing basis in order to adjust labor, supplies, materials and other costs to achieve budget.
  • Follow controls for food purchasing, receiving, storage, preparation.
  • Communicate daily with the Executive Chef for an update regarding planning, staffing, and internal procedures.
  • Communicate directly with banquet manager or captain for guest count, special request and timing of food functions to attain highest guest satisfaction.
  • Keep in contact with all outlets to ensure quality and consistency.
  • Order food quantities and other expense items and oversee production for banquet food operations with purchasing, banquet management and Executive Chef.
  • Participate in banquet functions from planning to preparation to dish up of function.

EDUCATION and/or EXPERIENCE

  • Minimum 2 years' experience as a Sous Chef in a restaurant, hotel, or food and beverage unit with a similar style of dining, capacity, and volume.
  • Must have at least 2 years of banquet/catering experience & ability to manage multiple on-premise events simultaneously through skillful organization and delegation skills.
  • Must have strong managerial experience with operations, logistics, guest service and all other aspects of the restaurant
  • Culinary Degree preferred but not required.
  • Knowledge of your venue's featured cuisine and beverages is a plus. (i.e. For a fine dining Italian Restaurant, representatives should know history, origin, content, and preparation methods of Italian cuisine and wines.)
  • Must possess valid ServeSafe/Food Safety Handler's/TIP Management certification
  • Able to meet financial targets
  • Ability to meet the physical demands of standing, walking, squatting, lifting and carrying for extended periods of time, to be seated for long periods of time at a computer, stand for long periods of time for food preparation and service, to knowledgeably and professionally respond to client inquiries, to read, to calculate mathematical equations especially as they relate to recipes and scheduling.
