Job Summary:

In this role, you'll coordinate activities of and direct training of cooks, and other kitchen workers engaged in preparing. You'll be cooking foods to ensure an efficient and profitable food service by performing the following duties personally or through subordinate supervisors:

Essential Duties and Responsibilities

  • Plan or participate in planning menus and utilization of food surpluses and leftovers, taking into account probable number of guests, marketing conditions, popularity of various dishes, and recency of menu
  • Estimate food consumption and purchases or requisitions foodstuffs and kitchen supplies
  • Order or requisition food and other supplies needed to ensure efficient operation
  • Review menus, analyzes recipes, determines food, labor, and overhead costs, and assigns prices to menu items
  • Write, maintain and update all menu specification, recipes and pictures
  • Direct food apportionment policy to control costs
  • Hire, supervise and discipline cooking and other kitchen personnel
  • Coordinate employee assignments to ensure economical and timely food production
  • Observe methods of food preparation and cooking, sizes of portions, and garnishing of foods to ensure food is prepared in prescribed manner
  • Test cooked foods by tasting and smelling them
  • Devise special dishes and develop recipes
  • Familiarize newly hired Chefs and Cooks with practices of kitchen and oversee training of Cooks and Apprentices
  • Establish and enforce nutrition and sanitation standards for restaurant
  • Perform end of month inventory of food
  • Conduct Big 4 Inventory Quarterly
  • Conduct Department meetings quarterly
  • Assist in End of year budgets

Qualifications

Education/Experience

Associate's degree (A.A.) or equivalent from two-year Culinary college or technical school and 5 years as a hotel chef; or equivalent combination of education and experience. Local Health Department Sanitation Certification required.

Other

Ability to work a flexible schedule, including early and late shifts and weekends and holidays. A minimum work week consists of 50-55 hours.
