Position Overview

The Executive Chef will be responsible for Hilton Garden Inn & Toscana Conference Centre Kitchen Operations

 Essential Job Functions

  • Establish Kitchen operating standards consistent with the operations objectives
  • Develop standard recipes card for preparation and presentation standards and Costing
  • Develop and/or oversee menu selections for Restaurant and Banquets
  • Food Cost; Purchase and to order food items and keep food cost at approved range
  • Maintain an organized and efficient flow of production, with regards to changes in forecasts and menus
  • Responsible for inventories and to enable team members to successfully prepare menu items
  • Continually monitor food and labor costs and ensure that food and labor costs are within the goals established
  • Maintain control of the Standards of Purchasing and Receiving items
  • Challenges and encourages creativity with team members
  • Ensure that the Kitchen is maintained in a clean and orderly manner and all working equipment is maintained in working condition
  • Manage all aspects of the kitchen including operational, quality and administrative functions
  • Manage customer relations
  • Maintain Hilton Brand Standards
  • Support Brand standards through training and assessment of the Team
  • Assist other departments wherever necessary and maintain good working relationships
  • Comply with hotel security, fire regulations and all health and safety and food safety legislation
  • Report maintenance, hygiene and hazard issues
  • Performs other duties as assigned

 Requirements

  • Canadian Red Seal Certification
  • Excellent planning and organizing skills
  • Excellent leadership, interpersonal and communication skills
  • Ability to work flexible hours
  • Ability to perform multi-task and meet deadlines
  • Strong supervisory skills
  • Positive attitude
  • Ability to work under pressure
  • Ability to work on own or in teams
  • Previous kitchen experience at least with 6 yrs. in a similar role of an Executive Chef
  • Managing union work environment
  • Passion for producing high quality food
  • Knowledge of current food trends
  • Proficiency with computers and computer programs, including Microsoft Word, Excel and Outlook
