Director of Member Dining

Founded in 1951, Lakeside Country Club is a top tier private Member-owned country club in the West Houston area. Lakeside is a family oriented country club that provides outstanding social and recreational services to its membership.  While our facilities were destroyed during Hurricane Harvey, our new clubhouse is scheduled to open in early 2020.  Once completed, Members and guests alike will be able to enjoy the wide array of traditionally elegant facilities.  The main clubhouse will be 87,000 square feet and will be open 6 days per week, year round.  Amenities will include A la Carte dining, 5 banquet rooms that can accommodate seating for 16-600, two locker rooms, casual dining restaurant, 18 hole golf course, swimming and lap pools with poolside dining, 11 outdoor tennis courts, and a 15,000 square foot state-of-the-art fitness facility.

Job Summary:  The Director of Member Dining is responsible for the Main Dining Room, Main Dining Room Bar, Casual Dining Room, Oasis Dining, Men's and Ladies Grills and Men's Grill Bar. This person supervises these areas to ensure Member and guest satisfaction through personal attention and proper service procedures.  This individual minimizes the Club's losses from operations in these areas by promotion of sales and control of labor and miscellaneous costs.  The Director of Member Dining is responsible for the recruitment, hiring, training, supervision, career development and timely reviewing of the employees assigned to these areas.

Lakeside Country Club prides itself on un-comprised standards of quality in all operations.  The Director of Member Dining is an integral component in assuring that standards are not comprised and that Member satisfaction is our primary goal.

Responsibilities: 

  • Learn Member names and address them by name whenever possible
  • Responsible for the accuracy and timeliness of service for all Member dining areas
  • Inspects all member dining areas prior to and during service to make sure furniture is properly arranged and everything is clean. Ensure lighting and background music are at the appropriate levels
  • Greet Members and guests entering by name, and seat them whenever possible. Communicate with each table to ensure Member satisfaction with both food and service.  Thank Members for coming upon departure and invite them to return.
  • Make brief stops at all Member tables to insure service progression and Member satisfaction
  • Provide a "Hands on Approach" to assisting the servers during periods of high activity
  • Handle complaints diplomatically and promptly. Inform Assistant General Manager on duty immediately if any additional action needs to be taken.
  • Assign stations and side duties to Team Members, rotating responsibilities and assignments so as to make the work load equal for all
  • Hold mandatory line up meetings prior to lunch and dinner service with the Service Team, to check appearance, cleanliness, grooming and equipment. Assist the Chef in presenting the daily specials, buffet items, non-available menu items, pricing and suggested wines.
  • Check function sheets to insure proper set up and staffing of any special function in any Member dining area
  • Responsible for the proper staffing levels for all Main Dining, Casual Dining and Oasis Dining areas; anticipate and plan for peak service hours and Service Team absenteeism. Monitor hours of staff with respect to controlling overtime.
  • Is responsible for the hiring of all personnel within the Main Dining, Casual Dining and Oasis departments, ensuring that all proper paperwork is completed in both a thorough and timely fashion. Works closely with Human Resources
  • Create and maintain individual records for each employee and makes sure any and all disciplinary actions are recorded and filed. Both compliments and complaints should be placed in the individuals file
  • Responsible for the scheduling of all Main Dining, Casual Dining and Oasis Dining service and bar personnel
  • Ensures that all Lakeside Country Club policies, procedures and standards are followed in compliance with the employee handbook
  • Establish a par stock for supplies such as linen, dry goods, food stuffs, silver, and glassware and insures these are maintained
  • Responsible for the proper training of all Service Team Members together with comprehensive written documentation of all training performed. Responsible for implementing and monitoring the new employee training program
  • Hold training sessions for employees as a group, a minimum of once per week, to discuss various aspects of service, to include Member comments and feedback
  • Audit Server's checks on a nightly basis to insure proper Member signature and accuracy of charges
  • Is proficient with the Point of Sale system
  • Responsible for updating daily and weekly specials and menu pricing
  • Responsible for training staff on Point of Sale system to include periodic checks to insure proper menu inputting
  • Function as the Manager on Duty for Lakeside Country Club. This position secures the building in the evening, when needed tours and inspects the club for maintenance and cleaning needs and interacts with the membership throughout the club.
  • Supervises the Associate Managers, Dining Supervisors, and all Service Team Members for the Main Dining Room, Men's Grill, Ladies Grill, Men's Lounge Casual Dining and Oasis Dining
  • Attends weekly staff & function meetings
  • Performs other duties as assigned
