We have transformed this hotel with a complete renovation and re-opened as the dazzling Marriott Orlando Downtown, conveniently located adjacent to the downtown UCF campus and nestled in the future Creative Village.  We are looking for a Prep Cook for our hotel that features 297 redesigned guest rooms and 15,000 square feet of sophisticated meeting accommodations.

Our Prep Cooks have a passion for making culinary a true art.  They take pride in the overall experience their entrees provide the guests.  They are energized by the fast paced bustle in the kitchen and being a valued player on the culinary team.  They understand the importance of cleanliness, safe food handling, listening and helping other team members.  Good under pressure, and always willing to fulfill special requests by the guest with a can-do attitude.

 Responsibilities:

  • Perform opening and closing procedures per checklists.
  • Set-up and break down work station.
  • Prepare ingredients for cooking, including portioning, chopping, and storing food before use.
  • Wash and peel fresh fruits and vegetables to prepare them for cooking or consumption.
  • Measure and mix ingredients according to recipes using various kitchen utensils and equipment.
  • Prepare cold foods, including preparing salads, cold sandwiches, condiments, and dressings.
  • Ensure the quality of the food items and notify manager if a product does not meet specifications.
  • General Knowledge on how to operate ovens, stoves, grills, microwaves, and fryers to prepare foods.
  • Be knowledgeable of menu items and features including their garnish, contents and preparation methods.
  • General knowledge in cooking methods including poaching, braising, roasting, charbroiling, sautéing, grilling, frying, and baking.
  • Ensures all food is prepared, cooked and presented in accordance with appropriate recipes.
  • Know common food allergens and their substitutes.
  • Acknowledge any special requests and prepare the menu items accordingly.
  • Test foods to determine if they have been cooked sufficiently, using methods such as tasting, smelling, or piercing them with utensils.
  • Communicate any assistance needed during busy periods to the Chef to ensure optimum service to guests.
    • Assist in same day or advance prep for any and all stations in the kitchen.
    • Use kitchen tools safely and appropriately, including using appropriate tools to open boxes, cans and cartons.
    • Keep knives sharpened, use proper knife handling procedures and correct knives for particular food item or specific task.
    • Use measuring tools (for example, scale, measuring cups, measuring spoons) to precisely measure ingredients and portion sizes.
    • Disassemble and assemble kitchen equipment following safety procedures when cleaning.
    • Wash and disinfect kitchen area including tables, tools, knives, and equipment to ensure sanitary conditions and meet the departmental standards, including using sanitizers required by health department.
    • Recognize and follow quality standards for meats, vegetables, fruits, dairy products and grains, including proper storage of these items.
    • Ensure compliance with food safety and handling policies and procedures i.e., use dates, temperature of appliances and food.
    • Adherence to all safety protocols including handling and transportation of foods and knife work.
    • Practice correct food handling and food storage procedures according to federal, state, local and company regulations.
    • Check and ensure the correctness of the temperature of appliances, food using thermostats and thermometers, including monitoring freezer systems, such as fans, drains, and doors, for proper operation, and report issues or problems to facility management.
    • Perform other reasonable job duties as requested.

     

    Requirements:

    • Stand, sit, or walk for an extended period of time. Move, lift, carry, push, pull, and place objects weighing less than or equal to 25 pounds without assistance and objects in excess of 25 pounds with assistance.
    • Stand and walk for an extended period of time or for an entire work shift.
    • Reach overhead and below the knees, including bending, twisting, pulling, and stooping.

     Desired Qualifications

    • Previous Food and Beverage experience.
    • Experience as a Prep Cook a plus.
    • Associate's degree (A. A.) or equivalent from two-year college or technical school; or equivalent combination of education and experience desired
    • Good Communication skills.
