FUNCTIONAL ACCOUNTABILITIES: • Hires, trains, supervises and directs beverage staff in accordance with business needs, productivity and service standards. Communicates effectively, both verbally and in writing, to provide clear direction to staff. Assigns and instructs Beverage staff in details of work. • Develops promotions for lounges and updates monthly wine promotions in the restaurants. • Implements effective control of beverage and labor costs within the beverage department. Maintains established inventory by ordering all liquor and supplies in accordance with business needs. Allocates products and equipment according to size of function and/or house count. • Resolves guest complaints, promptly & efficiently. • Manages bar operations to maximize profitability, minimize liabilities and conforms to the regulations of the alcoholic beverage commission of the state of Arizona. • Monitors & maintains labor costs within budgeted parameters on a daily, weekly, monthly basis. • Supervises cleaning & maintenance of furniture, fixtures & equipment. Arranges for repairs as necessary. • Inspects Lounges, Receiving & Storage areas to ensure that Health & Safety regulations are adhered to at all times. • Assists in the development of marketing for Beverage and for implementation of promotional campaigns as assigned. • Monitors fiscal budget to ensure efficient operation and that expenditures stay within budgeted limitations. Takes action to correct any deviations from the budget. • Receives & checks deliveries to ensure they adhere to specifications. • Cash handling procedures are followed closely & correctly. • Monitors specific inventory levels on a daily, weekly, monthly basis as requested. • Monitors opening & closing procedures of outlets & personnel. • Verifies the accuracy of payroll before submission to the Payroll Department. • Communicates freely with other staff members on a daily basis. • Enforces the policies & procedures in a consistent manner, as required by the Grand Canyon Squire Inn, the State of Arizona & Federal Laws.
