Cooks are high impact team members enabling Hillcrest Country Club to ensure quality product and service in each of its 5 restaurants plus an employee cafeteria.  From the pool and courtside cafes, to the formal dining room, grill room and dining patio, we depend on skilled Pantry Cooks, Prep Cooks, Line Cooks (cold or hot side), and Pastry Cooks, working as a team under the leadership of our executive chefs, to ensure that HCC is the dining destination of choice for our members and their guests, both for restaurant dining and our many private banquet events.  Quality is our chief concern and we look for experienced candidates who are certified food handlers, familiar with all the requirements of health department sanitation standards.  Every Hillcrest cook is tasked with food preparation, quality assurance and following the appropriate health, safety and sanitation guidelines. 

  • Prep and set up the Kitchen line for service.  Maintain a high standard of cleanliness and safety, cleaning and organizing work stations before ending the shift.
  • Read menu to estimate food requirements and order food from supplier or procure food from storage, using the prescribed order requisition form. 
  • Check all menu items and make sure all prep is done before the Restaurant opens.
  • Take ownership in the kitchen line and check all food ticket orders.
  • Check new revised BEO'S and posts for the daily events.  Plan in advance for all requirements of parties and execute all food preparation.
  • Check freshness of all food and ingredients before cooking.
  • Wash, peel, cut and shred vegetables and fruits; cut meat, poultry and seafood to prepare them for use; weigh, measure and mix ingredients according to recipes
  • Prepare, season and cook soups, meats, fish, vegetables, pastries, salads, dressings and/or other foods according to standardized recipes and Club standards.
  • Adjust thermostat controls to regulate temperature of ovens, broilers, grills, roasters and steam kettles.
  • Assist other chefs with preparation of food for the various Club venues including banquets, special events, parties and the Gourmet Shop to ensure systematic, on-time, organized output.
  • Before ending the shift, clean and organize work stations and communicate to the Chefs and co-workers if any prep needs to be done to complete the assignments for the day.
  • Plate food in the most appealing way possible and in accordance to our plating guide.
  • Set up buffets, omelet, carving and other stations as required, keeping them clean and organized with sanitizer buckets according to appropriate Health Department regulations and basic kitchen standards.
  • Maintain active Food Handler certification.
  • Keep the walk-in refrigerators and coolers clean and organized.

SKILLS & QUALIFICATIONS:

Essential:

  1. At least 2 years previous cooking experience in a high-volume operation
  2. Good food preparation skills and the ability to follow recipes and instructions.
  3. Able to communicate effectively and professionally in English
  4. Team player with can-do attitude, able to work well with others, resolving problems quickly and effectively
  5. Able to work well under pressure
  6. Organized and proactive
  7. Exceptional grooming habits, maintaining a clean and complete uniform as designated by management

Occasionally exposed to wet and/or humid conditions; moving mechanical parts; toxic or caustic chemicals; extreme cold and heat; risk of electrical shock. Requires ability to accurately distinguish food tastes and smells. Must be able to lift and carry up to 25 lbs.
