Job Summary

Executive Steward will have overall responsibility for the Stewarding Department including ordering, control and inventory of all China Glass and silver; adhering to Sanitation Standards; and managing the day to day operations of the back of the house food and beverage operations from a cleaning/sanitation perspective.

Essential Functions

    • Coordinates all Kitchens to support back and front of the house operations
  • Maintains on time delivery of clean and sanitized equipment to requisitioning department
  • Responsible for the cleanliness of all back of the house F&B areas
  • Responsible for the pest control program for the entire F&B operation - both front and back of house
  • Works closely with overnight cleaning contractor to ensure all areas are cleaned
  • Controls the use, movement and storage of hazardous cleaning chemicals and compressed gasses.

  • Manages Operational and Labor Costs against Budget
  • Conducts New Product and trend research to keep our operation on the cutting edge
  • Manage and effectively communicate with Stewarding Employees
  • Coordination & creation of opening & closing procedures
  • Develop job description & sop's accordantly to create effective levels of quality & efficiency
  • Communicate effectively with peers, management, line and front of the house employees
  • Conduct ~ attend meetings including: daily communication, service ~ culinary line up, chef's meeting, weekly staff meeting, monthly department meetings
  • Responsible for transporting and safely and in a timely fashion delivering food from the kitchen to designated banquet space
  • Take, record and maintain the inventory of China, Glass and Silver for the property
  • Provide support and leadership on the Food Safety Program for the resort
  • On a daily basis inspect the kitchen and the property for proper cleanliness and maintenance and follow up with the necessary departments
  • Maintain all sanitation and HACCP documentation in accordance to health codes
  • Guiding& supporting the team to exceed our guest satisfaction goals
  • Use the associates handbook and DH&R philosophy as a tools to effectively coach employees
  • Provides essential hands on leadership to ensure functional food & beverage operations throughout the property with a view of improving guest satisfaction, brand presence and effectiveness.
  • In conjunction with Food & Beverage Operations, develops clear, concise and detailed equipment specifications, to provide production efficiencies, compliance and safety assurance for all employees operating the equipment.
  • Reviews and analyzes operational workflow, equipment needs, safety & environmental compliance and efficient production in all venues.

Other Duties

  • All Associates are required to fully comply with hotel and departmental rules, regulations and policies for the safe, secure, effective and environmentally friendly operation of the hotel facilities. Examples include, but are not limited to lost and found procedures, emergency procedures, recycling efforts, etc.
  • Attend and participate in all hotel and/or departmental meetings, training sessions and other information meetings.
  • Regular attendance in conformance with hotels standards is essential to the successful performance of this position.
  • Comply with hotel grooming standards for both uniformed and non-uniformed associates.
  • Comply with hotel service and behavioral standards towards our guests, vendors and fellow colleagues, including, but not limited to ensuring proper phone etiquette, courteous and respectful behavior and maintaining a friendly and positive attitude.

Physical Effort:

Significant portions of day require prolonged standing, moving and lifting items weighing 25lbs.  Ability to visually review documents and computer screen throughout day.

Physical Environment:

Ability to walk or stand for extended periods of time during course of shift.

Manual Skills

Significant portions of daily assignments involve application of manual skills requiring motor coordination in combination with finger dexterity, e.g., typing, handwriting, or machine operations.

Work Schedule:

Due to the cyclical nature of the hospitality industry, Associates may be required to work varying schedules to reflect the business needs of the hotel.

Safety:

Responsible for operating within hotel safety guidelines, including the safe and responsible operation of hotel equipment. Reports and addresses safety concerns as they arise. Ensures safe handling of chemicals in accordance with hotel and department standards and utilizes proper personal protective equipment (PPE) when appropriate.

Qualifications
